OK, look. The struggle is real at our house when it comes to packing lunches. It’s the day-to-day grind of not only remembering to actually PACK my kid’s lunch, but also thinking beyond the sandwich. I’m pretty sure that almost all parents would agree that it is challenging to continually offer fun, healthy options that kids will eat. So today just in time for back-to-school season, I am sharing five easy and healthy lunches that kids will love.
First up is a homemade and much healthier version of a Lunchables. All you need are whole grain crackers, cheese cut into squares, lunchmeat or my kids’ favorite – pepperoni slices.
One of our favorite lunches are yogurt parfaits. Fill a small reusable container with vanilla-flavored greek yogurt, berries, and granola. This lunch is jam-packed with protein and nutrients that kids need to keep them fueled for the day!
Every kid loves pizza! We like to make these mini pizzas using tortillas. Using a large round cookie cutter, cut 12 tortilla circles and fit into 12-cup muffin tin. Top eachwith a tablespoon of marinara, a sprinkle of shredded mozzarella cheese, and some pepperoni (or your child’s favorite topping). Bake for 10-12 minutes at 425 degrees.
While most kids don’t love real sushi – they will definitely LOVE this faux sushi made by rolling up a tortilla filled with a whole banana, sunflower seed butter, and jelly. Cut it into slices to look like “sushi”. Adorable and oh-so-yummy!
Finally, sandwiches tend to get a bad rap but the truth is that they are easy and tasty. It’s all about keeping them fun! How about making a traditional ham and cheese, but giving it a twist by cutting it into a silly shape using cookie or sandwich cutters?
Finally, my last tip is to think about the way you package your child’s lunch as well. Personalized lunch boxes, drink bottles, and bento-like containers with small compartments make lunch more exciting for kids!
