Mother’s Day is right around the corner and I know that one of my favorite ways to celebrate is by sleeping in and waking up to a yummy breakfast or brunch (that I didn’t have to cook, of course). So today I’m sharing a few breakfast or brunch recipes that are both delicious and make a beautiful presentation. They are the perfect way to celebrate moms this Mother’s Day! The best part? All of the recipes are very easy to make – you can even get the kids to help!
Pancakes on a Stick
Ingredients:
- Silver dollar size pancakes
- Raspberries
- Powdered sugar
- Maple syrup
- Skewers (cut in half)
Directions: Using your favorite recipe, make silver dollar size pancakes. Stack them neatly in groups of 5 or 6. Top with a raspberry and a light dusting of powdered sugar. Place a skewer through the raspberry and the stacked pancakes. You can even drizzle with a little maple syrup.
Yogurt Parfait
Ingredients:
- Vanilla Yogurt
- Granola
- Berries
Directions: Place vanilla yogurt into dessert shooter cup. Top with granola and blueberries.
Egg Toast Cups
Ingredients:
- 3 tablespoons unsalted butter, melted
- 8 slices white or whole-wheat sandwich bread
- 6 slices bacon, cooked
- 6 large eggs
- Italian parsley, roughly chopped
- Kosher salt and ground pepper
Directions: Preheat oven to 400 degrees. Lightly butter 6 standard size muffin cups. Using a rolling pin, lightly flatten bread slices and cut into (8) 4-5 inch rounds. Cut each round in half, then press 2 halves into each muffin cup. The bread should overlap and go up the sides of the muffin cup. Patch any gaps at the bottom or sides with extra pieces of bread. Brush bread with remaining butter.
Crack an egg into each muffin cup. Season with salt and pepper and top with crumbled bacon and parsley. Bake until egg whites are just set, 20 to 25 minutes. Loosen the egg toast cup by running a small knife around each muffin cup and carefully remove each egg toast cup. Serve immediately.
